Strawberry Tarts
8 tart shells, (made out of your favorite pie crust
mix)
Cook 1 pkg. vanilla pudding with 1% cups milk, remove from heat and add 2 tblsp. of butter, let cool.
1 Quart of strawberries: wash 8 hull berries, crush
1 cup berries and set aside for glaze, add 2 tblsp.of confectionery sugar to remaining whole and set aside.
Glaze - ½ cup granulated sugar - 1½ tblsp. cornstarch - ½ tsp. lemon juice - Add to crushed berries and cook over medium heat until thick and dear. Press through sieve, cool about 15 minutes. Fill. tart shells with 2 tbisp. pudding, add whole berries to each shell, spoon berry glaze on top, chill thoroughly and serve.
